Hij genoot een klassieke opleiding op het hammondorgel. Zijn eerste professionele stappen in de muziek deed hij met een eigen bandje vanaf 1972. Zijn doorbraak komt echter door het toetreden tot Cozy Powells Hammer met Frank Aiello, Bernie Marsden en Neil Murray. Het blijkt een hechte vriendengroep die tot op heden (op de in 1998 overleden Cozy Powell na) nog veel met elkaar in contact komt. Na een doortocht bij Gary Moore treedt hij toe tot Ritchie Blackmores Rainbow waar Cozy Powell drummer is. Tijdens zijn doortocht bij Rainbow die drie jaar zou duren speelt hij mee op het debuutalbum van Michael Schenker en Cozy Powells soloalbum Over The Top, waarop hij een bepalende rol speelt alsook op ex-Black Sabbath-zanger Ozzy Osbournes album Bark at the Moon. Bij Ozzy zou hij zo'n 4 jaar blijven doch blijft ook deeltijds lid van Gary Moore zijn band. Begin de jaren 90 stopt Airey met toeren omwille van de ziekte van zijn zoon, hij blijft echter wel nog (veel) sessiewerk verrichten. In 1996 krijgt hij weer zin in toeren en gaat hij op tournee met ELO waar hij Louis Clarke vervangt. Bij diens terugkeer werkt hij regelmatig met Uli Jon Roth tot hij toetreedt tot Company of Snakes van Micky Moody en Bernie Marsden. In 1997 werkt hij mee aan het Eurovisiesongfestival met de winnende groep Katrina and the Waves en dirigeert er ook het orkest tijdens hun uitvoering van "Love Shine a Light", waarvoor Airey ook de orkestratie deed. In 2001 speelt hij korte tijd als vervanger van de zieke Jon Lord in Deep Purple. Lord stapt eind 2002 uit de band en Airey treedt dan aan als vast bandlid. Ondanks zijn vele muzikale bijdragen aan andere muzikanten, brengt hij zijn tweede soloalbum pas in 2007 uit.
